I believe the CVS demo is updated nightly. As for the other demos, I’m not sure.

The US Pacific times that they are restarted are listed somewhere on the demo pages (I think).
3.1.0 Development Demo (7:12 AM US Pacific time)
CVS Development Demo (7:02 AM US Pacific time)
Also note I will occasionally restart them manually at other times (after a big bug fix or after finish an update of the translation sql tables)
When they are restarted that basically means they are re-installed from scratch and all saved changes are lost.
