Hello everyone and thanks for your help in advance. Would someone be able to point me to which table patient encounter is stored? Specifically, basic encounter level information like checkin time, checkout time, provider, etc.

The Patient encounter details like date of service,facility and other details will be stored in the form_encounter table.
In openemr_postcalendar_events table you could able to find the appointment details.
