I am unable to update insurance in the encounters while the insurance is already in the demographics.

If I understand your situation correctly, OpenEMR is designed so that the insurance information displayed in an encounter is read- only, it is taken from what is in the Insurance widget under Demographics. The insurance info in Demographics must be changed before it will display in the encounter.
