How to create and fill consultation letter template

In other EMRs I’ve used this is called ‘Letter’ or ‘Consultation Letter’…
It is used every day for writing off-work notes, letters to insurance company, visit reports, etc.
How can I create a formatted template for a letter which will auto fill some information (patient demographics, medications, PMHx, current user name and signature) and allow the doctor to edit-
