I am trying to customize the appearance of the New Patient Forms. It looks as if the ‘Insurance’ Portion of the New Patient Form would be included in the “Demographics” Layout, however, when going ti >Administration > Layouts > Demographics, there is no section for the Insurance. I’v looked in the other Sections under Layouts as well, but do not see anything… Is the Insurance portion if the forms ‘non-editable’?

The Administration-> Layouts-> Demographics will not handle insurance section.
Insurance section is defined as an separate portion in the file mentioned below.
interface/patient_file/summary/demographics_full.php
