I have bought a new server with more up to date hardware 8 cores and 32 GB RAM. I just do not see any speed difference. Do anybody know what (MySQL) settings I can adjust to make better use of the new hardware.

OpenEMR shouldn’t require such beefy system specs. If you are experiencing slowdowns, here are a few questions to consider: What OS did you install the software on? What other software is installed on the system? Are you hosting more than one OpenEMR instance? Are you accessing your server from outside the network? What are your network specs?
If you share more details we may be able to help you optimize your setup.
The server runs Debian stable. It funktions as file and mail server and runs DCM4CHEE for my PACS functionality. 2 instances of OpenEMR runs, but only one is really used (7-8 simultanious users) all acces is from LAN and all clients sit on 1Gb lines.
I expect the way to go would be to get MySQL to have all relevant data in RAM if possible.
