Server Capacity

I am interested to know what Server Capacity would be, I am interested in stetting up a multiple site installation on the server, assuming an average of 4 users per site and 1000 patients per site.

The question is how many sites SHOULD a server like this handle (I know it is an impossible question as it depends on usage, I am just doing initial budgets and would like to know what the estimates are)

Server Details :
  Intel Xeon E3-1230 Quad Core 3.2GHz
  8 GB DDR3 1333 MHz ECC
  2 * 500GB SATA HDD (raided)
  running Ubuntu Server or Debian

are there any suggestions to increase capacity ?

I have more or less same:

documents are taking up 16GB
os I gave 50G that is the system and server
I gave about 300 to documents and database
My server goes up to 1.5 TB
I have 4 sites and altogether 4,000+ patients
we upload a lot of documents ( takes up the most)

HP Intel 2 Xeon E5335 Quad Core,  8 GB ram, 8 325 sff  SATA HDD (raid 1)

works pretty good.
But I am very subjective when it comes to freebsd. It is also quite fast
