hey,

We have a 3.1.0 demo here that contains sample data:

I’ve never tried this but could try this from the demo:
administration->database->openemr->export->click ‘GO’

This will show the database. You can then copy/paste this into your local 3.1.0 demo version by doing admin->adminisration->openemr->SQL(paste it here)->click ‘Go’

let us know if it works (note this could possibly ruin your version if goes wrong so be prepared to re-install openemr if this happens)
