He was discharged the next day on treatment for follow up.

What exactly are you trying to automate?
There’s a template letter writer in ‘popup’ (bottom of left menu frame) -> letter that allows you to make letter templates (note you need to have a patient selected to use it).

I would like to insert the following fields in a letter template from patient encounter form: Consultation brief, Date of Service and Onset/hosp. date. Is this possible for particular visit?
Yes, it is possible to include the fields for your requirement in the letter template. You need to work on the following file (for generating additional fields like Consultation brief, Date of Service and Onset/hosp. date) to get it done.

You need to retrieve the values (mentioned in your list) from form_encounter table. Please let us know if you need any further
Would it be possible, if you manage to include your fields to make these optional for inclusion? I would ask for the option to include also the option to include e-mail address for different parts of the letter. Referrer, Client, To_?
