Is it possible to remove the e-sign as its not possible to attach an actual signature to the documents. It just causes a bother to look at all the time.

Because there are multiple files to alter, the safest way forward is to seek professional help.

One more thing, when you e-sign an encounter or form, how do you edit it or make ammendments or rather unlock it?

For all that read this, there is no way to unlock the encounter from the user interface. That would defeate the purpose of locking it. I suppose in the designers mind. The only way to unlock the encounter is to go to the eSign table and look up the date/time of the signature which is unique. There remove the 1 under is_locked. Then the encounter would be unlocked for changes.
