Is there a way to add, edit or delete certain fields within the create a patient page or any other page?

Yes, It is possible to disable some fields from the create patient page.
It can be done here
Admin → Forms → layout
On the Edit Layout dropdown, select Demographics:
The form properties should load.
If you need to remove some field from the create patient page (Demographics),
use the UOR field and change to unused to remove it from view.
To delete the fields completely, select the specific field using the checkbox and click delete on the top of the section.
Some of the forms available in OpenEMR will require coding.
