I am on OpenEMR V2.7.3.
I am going to finally, bite the bullet, and going to update to the latest version.
Can someone help me how I should go about updating to the latest, I think I have to 
go through the intermediate versions and update version to version ? Just want to make
sure.

You need to apply all of the database updates from the relevant sql/*_to_*_upgrade.sql files.  Other than that you can go straight to the latest code.  Better to get current CVS rather than 2.8.2.

And of course, back everything up first!
