The difference between an encounter and an appointment has already been pointed out to me here, but what about “visit” ? is it the same as an encounter? are the two terms interchangeable in the OpenEMR context?

Yes, I think encounter and visit are largely interchangeable.
The “Create Visit” menu option creates a new entry in the database in the “form_encounters” table, and it also set the “Selected Encounter” to the one that was just created.
