I created several sites using Multiple sites tool and would like to remove one or two.
Is there an uninstall procedure? Or do I simply drop the DB and delete corresponding folder.

Sounds reasonable.
If login is not possible after dropping database & deletion of the folder(s) from openemr/sites, it probably means success.
When transferring a copy of OpenEMR to another device, it is essentially the transfer of the database & default directory (when only dealing with one site) on top of the application.
